Chef Riccardo Taught Us the Pala, Board by Board

Before Pala Romana ever reached our menu, Chef Riccardo — a Roman pizzaiolo trained in the pala tradition — spent time in our kitchen, working alongside our team to bring the technique to Jayanagar the right way.

Over an intensive hands-on residency, he walked our chefs through every stage: shaping the high-hydration dough by hand, reading the oven for the long, gentle bake the pala style demands, and finishing each pizza with the traditional scissor-cut serve.
